EASY POTATO HAMBURGER CASSEROLE

Weight watchers points = 8

3 potatoes, sliced thin
1 lb. hamburger
1 sm. onion
1/4 tsp. garlic salt
1 (16 oz.) can green beans, drained
1 can cream of celery soup
1/2 can of milk
4 oz. grated Cheddar cheese

Put sliced potatoes in bottom of greased casserole dish. Brown hamburger and onion (drain). Put on top of potatoes. Add garlic salt. Next add green beans. Mix celery soup and 1/2 can of milk and pour over beans. Top with grated cheese. Bake, uncovered, in 350 degree oven for 45 minutes. Put lid on last 10 minutes of baking.

(I sometimes use real garlic, and french fried onions over the top during the last ten minutes).

Hamburger Noodle Casserole

1 can 98% Fat-Free Cream Of Mushroom Soup
1 can 98% Fat-Free Cream Of Chicken Soup
8 oz reduced-fat sour cream
12 oz uncooked egg noodles
1 pound lean ground beef
1/3 cup Parmeasn cheese, grated


Prep:
Brown ground beef and drain. Boil noodles until tender and drain. Combine soups, sour cream. Add beef and noodles, mix well. Cover with foil and bake in a 9 X 13 dish at 350 degrees for 30-40 minutes or until bubbly.

QUICK TATER TOT BAKE

This is a great one too get rid of that holiday ham.

3/4-1 lb. ham or turkey
1 sm. chopped onion
1 pkg. (16 oz.) frozen tater tot potatoes
1 can cream of mushroom soup
/2 soup can milk
8 oz. shredded Cheddar cheese

Place meat and onion in a greased 9 x 13 inch pan. Top with
potatoes. Combine soup and milk. Pour over potatoes.
Sprinkle with cheese. Bake at 350 degrees for 30-40
minutes.

WW points = 12 (You could probably make it less depending on the cheese and type of ham used. )

Chili

This is one of my favorite recipes to make on a cold winter day. You throw it in the crock pot and just let it cook. It tastes just as good the second and third day as leftovers.

2 medium onions, chopped fine
1-1 1/2 pounds of lean ground beef or turkey
Saute until onions are done....drain fat away

Add to the above mixture....

3/4 cup chopped green peppers
1/4 tsp beaumonde(by Spice Islands)
1/2 tsp paprika
1/4 to 1/2 tsp pepper
1 tsp seasoned salt
1 tbsp chili powder (I usually put about 1/2 tbsp more for more spice)
1/4 tsp garlic powder (or 1 minced garlic clove)
16 to 32 oz. canned tomatoes
8 oz. tomato sauce
1 can corn
32 oz. beans, drained (can be kidney, pinto, great northern, your choice)
1 bottle beer (different brands give the chili different flavor, we like to add Corona)
OPTIONAL: 1 tbsp brown sugar
*You can also add jalapeno peppers or hot sauce if you like your chili really hot.

Combine all ingredients and simmer about an hour on the stove or in the crock pot.

Pattys chicken and rice casserole - Shared by Sky

My mother in law gave us this recipe a long time ago. It is a constant in our dinner rotation. I usually serve with canned green beans for an easy kick back dinner night.

I do not add the pimentos, but I add a can of sliced, drained mushrooms instead.

Chicken and Rice Casserole

Preparation Time: 10 minutes
Cooking Time: 90 minutes
Weight watchers points = 5
Calories: 246, Fat, 7.27, Fiber 0.63, Protein 19.

  • 4 chicken thighs
  • 1 13 3/4 oz Swanson Can chicken broth OR 2 chicken broth cubes diluted per instructions.
  • 1 package long grain wild rice mix
  • 1 cream mushroom soup (do not dilute)
  • 1/2 cup of water or white wine (I always use water)
  • 1 small can mushrooms (optional)
  • Salt and pepper to taste
  • small jar pimentos (optional)

Combine rice (not the season packet), broth, soup, pimentos if used, and water.

Pour mixture into large (13x9x2) baking dish. Place washed & trimmed thighs which have been lightly salted and peppered on top of mixture.

Bake 1 to 1 1/4 hours at 350 degrees. Stir rice mix around about 1/2 way through cooking time. (Baking dish and chicken do not have to be removed from oven when stirring).

This dish should be moist and rice tender.


Hint: Leave some chicken thigh skin on to keep meat moist.

*Freezes well.

Yield: 4 servings

Casserole - Layered Enchilada Pie

Brown: 1 lb. hamburger
1 cup chopped onion
1 clove minced garlic

Add:
1 tsp. salt
1/4 tsp. pepper
1 1/2 Tbs. chili powder
1 8 oz. can tomato sauce

Other: 6 tortillas
2/3 cup water
1 1/2 cup cheese, grated

In a 2 qt. casserole dish, add enough meat mixture to cover the bottom. Alternate layers beginning with tortilla, cheese, meat sauce. Sprinkle w/ remaining cheese. Add water over all, and cover. Bake covered in 400 degree oven, 30 min.

Casserole - Kielbasa Sausage Bake

Cut up in small chunks and brown 1 Kielbasa Sausage
(Place cooked sausage in a 13 X 9 inch pan and then add the following ingredients and mix well.)
1 bag of frozen homestyle potatoes ( small cubes)
1 cup frozen peas
2 cans cream of mushroom soup
1 1/2 C of milk
salt and pepper to taste
Sprinkle Cheddar cheese on top (optional)

Cover and bake at 375 degrees for 45 minutes.

Easy, warm and filling casserole dish. Makes great leftovers too!

Main Dishes/Casseroles/Hot Dishes

Pizza Casserole ~ Shared by Anna

1 Box Noodles (my family likes the medium shells)
1 lb. Hamburger
1 Jar Marinara Sauce
1 pkg Pepperoni - cut up (Could Substitute: Canadian bacon, sausage, etc.)
1/2 pkg. of Mozzarella Cheese
Salt and Pepper to taste

Cook Noodles. Brown hamburger. Mix together in a 9x13 pan. Sprinkle a little mozzarella cheese on top. Bake at 350 for 30 min.

Enjoy! This is a great one to make ahead of time then just bake when needed.
